Quick Refrigerator Sweet Pickles


  • 4 English cucumbers peeled
  • 10 cloves of garlic halved
  • 2 cups of water
  • 2 cups of wite vinegar
  • 1 1/2 cups of sugar
  • 6 scallions cut into 1/2 inch pieces
  • 1 cup julienne carrots
  • 2 tsp fine sear salt
  • 1 tsp mustard seed
  • 1 tsp ground tumeric
  • 1 tsp celery seed

In a large stainless steel bowl slice the cucumbers extremely thin on a mandolin.

Combine water, salt, mustard seed, celery seed, and tumeric in a medium saucepan and bring it to a boil. Add the onion, carrots, and garlic. Bring back to a boil and cook for 2 minutes. Add the vinegar and bring back to a boil. Remove from heat and stir in the sugar until disolved. In a bowl whisk together the apple cider vinegar, salt and sugar until dissolved. Pour immediately over the cucumbers and mix.

Cover and refrigerate for at least 6 hours. For best result 24 hours. Will keep for 2 weeks in the refrigerator.
